mother's day magic

I think the last time I was sitting in bed at 8:50 on a Sunday morning was last Mother's Day. This was after I had completed the Goggin's Challenge the day before and was awaiting my annual breakfast in bed, just like I'm waiting for it now. Mother's Day is wonderful and even more so this year, as I'll actually get to see my Mom. Last year, it just wasn't possible with all of the unknowns of the pandemic. I'm so grateful that my parents are both vaccinated, as are myself and my husband. The kids are still too young to get vaccinated, but my oldest will be able to get it later this summer.


In previous years, my favorite way to spend Mother's Day was to have little one on one dates with my kids. It's so rare to have time to spend with each kid individually. I didn't request that this year, mainly because my parents are coming over for dinner, and I probably wouldn't have the time to fit it all in. However, I will be pampered plenty today. Right now, my middle son and husband are working on breakfast. I had requested rice paper bacon, hash browns, scrambled Just Egg and baked beans. There were no hash browns at the store, so I'm getting tater tots instead (yum!). If you have never had rice paper bacon, it's definitely something to try. I'll leave the recipe in a separate post. This morning, I got up early to get out for a run, came back and showered and got back into bed. That's something I've always wanted to do after a long run, but I'm usually down making breakfast for everyone or busy otherwise.


For lunch, my daughter is making me ramen. It's pretty adorable. She asked me what I wanted for lunch on Friday. I didn't really give her an answer, but asked her to think about what she liked to make and so she chose ramen. We are also planning on painting each other's toenails later. I still have a pretty gnarly looking toenail from when I did my 20 mile race about a month ago. I'll chose a nice dark color so that it will be camouflaged and my middle son can stop turning away in disgust every time he sees it. My older son will be helping with dinner. Since my parents will be over, I'll also be working on dinner, but that's ok. We're keeping it simple with a big salad and grilled food. What I'm looking forward to the most are the hand made cards I know that the kids were all working on yesterday.


Finally, one last Mother's Day/early birthday gift that I got for myself- finally decided to switch over and try the Coros Apex. I haven't opened the package yet. Hoping to have some downtime later to open it up and play around with it.
